Strawberry, Shrimp and Feta Salad Recipe

OUR CONTINUING SERIES OF RECIPES AND WINE PAIRINGS


Spring has sprung! I don’t know about you, but I have had enough comfort food for a while, so if you are craving something refreshing and light, this may be the recipe for you. Pair with a nice light white wine and life is good!

SERVES 4

Ingredients


Salad:
  • ¾ pound peeled and cooked salad shrimp
  • 2 cups (about 10 oz) fresh strawberries, stemmed and quartered
  • 8 cups mixed salad greens such as butter lettuce and watercress
  • 4 oz crumbled feta cheese
  • 2 small avocados, chopped.
  • Pinch of dried red pepper
  • 1 small cucumber peeled and sliced (about 24 slices)

Vinaigrette:

  • 3 Tbsp extra virgin olive oil
  • 2 Tbsp balsamic vinegar
  • 2 Tbsp water
  • ½ tsp salt
  • ¼ tsp black pepper

Directions


To make Vinaigrette:

  • Combine the vinaigrette ingredients in a small bowl. Whisk the vinaigrette quickly for a few seconds until emulsified; set aside.


To make Salad:

  1. In small bowl, toss avocado with 1 tablespoon of vinaigrette; set aside.
  2. Add the pepper. strawberries and shrimp with 1 tablespoon of the vinaigrette.
  3. In large bowl, toss greens with enough of the remaining vinaigrette to coat lightly.
  4. Divide among 4 chilled salad plates and arrange strawberries and shrimp on top of greens.
  5. Sprinkle with cheese and garnish with slices of cucumber.
